can I tell you a secret?
Frankie hasn’t been this excited over a new recipe since… my garlic bacon burgers.
and I can’t blame him. because we’re obsessed with these meatballs. OBSESSED.
quite possibly as obsessed as we are with the Olympics. and THATS saying something.
can I tell you something else? ive had a headache all day and it’s awful. it’s like a sinus headache and I want to bash my head against a wall.
but I’m trying to forgo medicine while I’m on whole30 because I’m crayyyyyy.
is it weird that I think coffee might help my head?
I can’t have it because it’s afternoon and i’ll NEVER sleep but like. I really think it would help.
oh well. i’ll struggle through.
alright. SO. it’s day 26 of our whole30 andddddd would you believe that I ate these for breakfast, lunch, and i contemplated having them for dinner too yesterday?
and we had them for dinner on sunday too. and i had them for lunch today…
I made a batch and put them in the fridge and allllll I want to do is have them for every meal and then make more.
I lead a tough life.
because SERIOUSLY. I didn’t know you could pack that much flavor into chicken meatballs.
I had no clue.
I’ve been living in a really sad world.
also, I just assumed chicken meatballs would be dry and SPOILER ALERT: they aren’t. they’re delicious and not dry at all.
they are a LITTLE bit high maintenance – but really that’s just because you’re gonna brown them in a skillet first so they hold some semblance of a shape. otherwise they’d be a hot mess. literally. HAHAH. but trust me, the “high maintenance” part only takes up like 10 minutes and it’s worth it.
side note: if a mountain of meat balls is NOT your idea of heaven then how are we friends?
because I can’t even handle ^^ THAT situation.
I should probably get my caps usage in check. it doesn’t get more aggressive than my love of caps lock… well besides my love of run on sentences and exclamation points, obvi. (and my love of the word obvi)
actually, my love for these meatballs might trump all of my other obsessive/aggressive tendencies.
if given the choice I MIGHT even pick these over pokemonGo. now THATS saying something.

oh well, go eat a meat ball.
- 2 pounds ground chicken
- 2 eggs
- ½ onion
- ¼ cup almond flour
- 5 cloves of garlic
- 2 tablespoons minced fresh basil
- 1 teaspoon pink himalayan sea salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- Preheat the oven to 350 degrees.
- Prep the ingredients. Beat the eggs, dice the onion, and crush or mince the garlic.
- Mix together all of the ingredients besides the olive oil. Roll the meat into meatballs (if i you have a cookie scoop, I just use that to get the general shape. The meat will be really sticky and it's difficult to get them to keep shape).
- Heat the olive oil in a large skillet over medium high heat. After the olive oil is hot, add the meatballs and cook them for about 30 seconds for each side. I literally just take a cookie scoop and drop the meatballs into the skillet! You'll probably have to do this part in batches.
- Once you've seared all the sides, transfer the meatballs to a cookie sheet lined with parchment paper. Bake in the oven for 8-10 minutes or until the meatballs reach 165 degrees.
