Mexican Meatballs




  1. Preheat the oven to 375 degrees.
  2. Combine the peppers, onion, and cilantro in a food processor and run until the mixture is very finely diced.
  3. Place the mixture into a large mixing bowl with the ground beef, taco seasoning, mexican green goddess dressing, and the pinch of salt. Process the tortilla chips in the food processor until they reach a crumb-like consistency and add to the bowl. Knead the ingredients together with your hands and then roll into meatballs.
  4. Place a piece of aluminum foil on the bottom of a cookie sheet and set a cooling rack on top of the foil. Gently place the meatballs onto the cooling rack and bake for 20-30 minutes.
  5. Allow to cool and then serve in a salad, on zoodles, or even with tortilla chips.
